The London Coffee Festival Tickets

The London Coffee Festival

I can’t remember if I have mentioned it before that I am tea drinker!I love my english teas and when I was pregnant, drinking decaffinated tea was torture!! I don’t drink coffee as it seems to make me sleepy rather than being awake which is the opposite effect on me!! Whereas my hubby is quite enthusiastic about his coffee trying different methods and beans! He likes to drink espressos. I bought him the Bialetti Moka Express pot last year and he loves it!! Although he does say it is hit and miss with making the coffee as sometimes it is burnt or the coffee doesn’t come out right but he still enjoys the process!! I feel bad sometimes as he always want to share his coffee because it makes two cups! Recently he has been mentioning this new gadget called an ‘areopress’ and he heard great reviews! So I got it for his birthday present this year!! He was very impressed with his new gadget and said the coffee is very easy to make and taste really smooth!! I will blog the method next time!

He told me about the London Coffee Festival on 30th April to 3rd May at Old Truman Brewery, Brick Lane and asked if I wanted to go! I couldn’t really say no as in the past, I have dragged him to the cake and bake shows and wedding fairs etc so I felt like returning the favour!!lol! Plus I think it will be a nice family day out taking our Dee Dee with us!!!

In Time Out magazine they had a special offer promo code TIME15 for 2 tickets at £20. Normally it would cost £11.50. We are going to this festival on Sunday. There should be lots of coffee and some food stalls aswell!! I will need to try out some coffee there and maybe it will have a different effect on me as it has been a long time since I last drank some!! Will take some photos for you guys to see!!

Birthday cake request from my hubby!

Ready for cutting!

Ready for cutting!

It was my hubby’s birthday last week and I asked him, what does he want me to bake for him! He requested the blueberry and lemon traybake as that is his favourite cake! Normally, you should use a rectangle baking tin, but i couldn’t find mine so I have used a square tin instead.

Ingredients:

  • 125g soft butter
  • 225g caster sugar
  • 2 x eggs
  • 250g soured cream
  • 1 lemon zest and juice
  • 300g self raising flour
  • 1 teaspoon vanilla extract
  • Half teaspoon baking powder
  • 150g blueberries

Cream Cheese Topping

  • 50g soft butter
  • 300g icing sugar sieved
  • 200g cream cheese
  • 1 to 2 table-spoon of lemon juice
  • 50g blueberries

Method

  1. Preheat oven to 180 GM4 and line a rectangular baking tin
  2. Beat the butter and sugar until light and fluffy. Beat the eggs in one at a time until combined. Stir in the soured cream, lemon juice and zest, baking powder until everything is combined. Fold in the blueberries.
  3. Spoon the mixture into the cake tin and bake for 40 – 45 mins until the cake is baked. Remove from the oven and set aside to cool.
  4. Make the cream cheese topping by beating the butter and icing sugar until light and fluffy. Beat in the cream cheese and lemon juice and spread over the top of the cake. Make sure the cake is cool before you add the topping. Add some blueberries on top and I added some chocolate sprinkles.

My hubby was very pleased with his birthday cake! 🙂

Easter treats at work!

Chocolate easter treats!!

We have Easter weekend coming up so on Thursday, I made some chocolate treats for my work colleagues. I wanted to make something quick and easy and of course chocolate!!!

Cornflakes chocolate nests!yum!

I have always wanted to make chocolate cornflake nests as it looks easy and when I saw the recipe online, it is so simple to make!!! It’s a matter of heating up 50g butter, 2 x tbs golden syrup and 150g milk or dark chocolate and then mixing it with the 100g cornflakes!! Spoon them into a cupcake muffin tin and put them in the fridge to set. Just make sure you have fridge space to chill them for at least 30 mins. I decorated them with chocolate eggs on top.

My sister in law, Sharon she makes the rice crispies version which always go down very well at the kids birthday
parties!!! So moreish to eat!!

I also made some rocky road as you just mix everything together and chill to set!!! Had to hide all the treats from my husband, dee and my mum or otherwise there won’t be any left for my work colleagues!!!

Hope you all have a wonderful easter and enjoy the chocolate treats!!!
