Chocolate easter treats!!

We have Easter weekend coming up so on Thursday, I made some chocolate treats for my work colleagues. I wanted to make something quick and easy and of course chocolate!!!

Cornflakes chocolate nests!yum!

I have always wanted to make chocolate cornflake nests as it looks easy and when I saw the recipe online, it is so simple to make!!! It’s a matter of heating up 50g butter, 2 x tbs golden syrup and 150g milk or dark chocolate and then mixing it with the 100g cornflakes!! Spoon them into a cupcake muffin tin and put them in the fridge to set. Just make sure you have fridge space to chill them for at least 30 mins. I decorated them with chocolate eggs on top.

parties!!! So moreish to eat!!

I also made some rocky road as you just mix everything together and chill to set!!! Had to hide all the treats from my husband, dee and my mum or otherwise there won’t be any left for my work colleagues!!!

A Really Good Friday! :)

For lunch, I had a hog roast in ciabatta roll with apple sauce and rocket from ‘Love me Tender’ stall! They were also giving out free samples of the roast which attracted my attention, the meat was so tender and marinated! Delicious, all for a fiver! As my hubby is Catholic, on Good Friday, he is not meant to eat any meat so he was unable to taste this! He ended up getting a Mackerel bap with chips from ‘Bennet’s on the Waterfront’ stall which was very tasty! 🙂

We then popped into Peggy Porshen parlour in Belgravia for some tea & coffee and Champagne & Strawberry cake!! The pink icing was so soft and not too sweet, the cake was extremely yummy! 🙂

As time is of the essence today! I made my nieces and nephew a tiny easter parcel filled with a chocolate bunny and sweet treats, I put them in cellophane bag which is great for gifts and tied a spring coloured ribbon!

We were going to my parents-in-law for dinner and I quickly made baked a batch of vanilla meringues and whipped up some double cream and prepared my strawberries! I like to ‘season’ the strawberries with a sprinkle of vanilla sugar and a bit of vanilla extract and mixing it altogether to enhance the flavours! 🙂 So much to eat for dinner, as they cooked 3 different types of fish, salmon, fried fish and fish in breadcrumbs! My nephew, Kyle has a ‘unique’ appetite as he had boiled rice, sweetcorn and cucumber!!! He could just eat a stick of cucumber for dinner! Whereas my niece, Alyssa has got an adult appetite being only 9 years old! Sometimes, her dinner portions are bigger than mine!

They helped me in plating up my dessert, Alyssa was spooning the cream and Kyle was putting the strawberries in everybody’s bowl so we all had the same amount!! It probably took me 2 hours from scratch to prepare everything for the dessert and it got demolished in 5 minutes!!! 🙂

I got a feeling that this Easter weekend is going to be a very indulgent food weekend!!! 🙂 Going to be extremely stuffed….Wishing everybody a Happy Easter and hope you all enjoy the break!!!

Hot Cross Buns – Easter!

It is coming up to Easter this week and I thought I will have a go at making my own hot cross buns!! 🙂 I took the recipe from BBC GoodFood website – click here. Although, my piping skills were not that great with the ‘crosses!’ as the flour paste just seem to spread everywhere on the bun! 🙂

The hot cross buns turned out to be bigger than I thought! But, they do taste lovely with some butter! 🙂
