After the christening, i booked a weekend trip to Brighton! As it was our first time away with Dee, I think i went slightly over the top with the packing as most of the stuff belonged to him rather than us!

In Brighton, we ate mostly take outs on the floor as most of the eating places closed quite early and we didn’t want to go out too late at night! Our room didn’t have a table so we ate on the floor!! We found that there were alot of mexican places to eat so i think it is very popular in Brighton!

For our first day, we had a typical fish and chips from Harry Ramsden and for the first time, we managed to finish all our dinner without having to hold Dee as he slept!!! Here are some of the foods that we had during our trip!

I am pleased to say that Dee’s Christening went really well last Sunday, he was very well behaved and looked like he enjoyed the event!! People were so generous as we recieved so many gifts, i haven’t even attempt to open anything yet as there are 2 massive grocery bags which are filled with cards and pressies!!! 🙂

We hired a caterer for this event as there were over 100 people to feed! The main dishes were:

  • Boiled rice
  • Vegetarian noodles
  • Sweet and sour fish
  • Caldereta (their filipino signature dish)
  • Chicken and mango
  • Lechon
  • Vegetables
  • Lasagne, pesto pasta, samosa – ninangs (god mothers) made

Dee's christeningFor desserts, everybody chipped in to make them, the ninangs, titas, and my mother in law made her famous fruit salad! Everybody goes mental for it esp my brother-in-law, Josh who eats ‘bowls’ of it at one time!!! I am sure that mum probably saved him a big bucket of fruit salad at home! :p

There were strawberry cheesecake, bibingka, brownies, rice crispies and coconut bites, oreo cupcakes, whoopie pies, oreo cheesecake, fruit salad, melons and watermelons! Lots and of course, Dee’s Christening Cake! 🙂 We ordered this from ‘Cake Box’, they make eggless cake and the sponge is so soft and light. For more info on their cakes, visit their website.

It’s my son, Dee Dee’s Christening tomorrow and I have been really busy in the kitchen baking from this morning! We have hired a hall and there will be Filipino food (hot) and a few of the ninangs (god mothers) are going to make some dishes and desserts aswell. With our caterer, we decided to drop their dessert from the menu and make our own desserts as normally when we go to parties, the aunties will bring a Filipino dessert and of course yours truly have some desserts to offer too!! 🙂 Also, it gives me a good excuse to bake some treats, although i don’t think Dee Dee was too happy as he was missing his mum!

For tomorrow, i have made the kids favourite Oreo cheesecake, chocolate Whoopie pies, and Oreo cupcakes. I don’t think i have mentioned whoopie pies on my blog before but I will be writing a separate post for this so that i can include the recipe for them.

I subscribe to the Jamie Oliver’s magazine and there was a flyer that my hubby picked up which was for a fab ‘traditional steak selection’ offer from Donald Russell’s company all for £29!!! You will get:

  • 2 x sirlion steaks
  • 2 x ribeye steaks
  • 1 x pave rump steak
  • 4 x pave rump medallions
  • 6 x mini steak burgers
  • 4 x port sausages

I also ordered 2 x lasagne for £7 aswell. It is free delivery and you can choose which day for your delivery! I recieved my package today and they were all vaccum packed and it also included a guide on how to cook the meat to perfection! 🙂

My mum is staying with us this weekend and she was cooking the steaks tonight! My mum and I had the ribeye steaks and Dan had the sirlion steak! I was going to cook the dinner tonight but my mum saw me in the kitchen all day baking cakes for Dee’s Christening this Sunday and wanted me to rest! Sweet mum eh! 🙂 Dinner was delicious and the steaks were juicy and tasty!! :0
