Australia Day – 26th Jan 2013

My friend, April at work told me it is Australia Day on Saturday 26th Jan and she was going to bake some typical Australian goodies for us to try! So, I offered to make some Lamingtons as this is well known in Australia.

Bascially, this is a vanilla sponge cake covered in chocolate icing and coated with desiccated coconut in a square shape!!! She was quite relieved when i offered to make this, now i know the reason why!! I started off by baking the basic vanilla sponge cake but due to the lack of time, i was only able to freeze the cake for a couple of hours rather than overnight. So, when i was making the coating, the crumbs were falling in to my chocolate icing and it was just very messy! I wasn’t sure what was the easiest way to do this, let’s just say, i was using two forks at the beginning, then a fork with a spoon and then at end, i was using my hands!! It was incredibly messy and sticky as the desiccated coconut was everywhere in the kitchen! I think i only had 3 pieces left and i was running out of my chocolate icing so ended up really scraping the bowl to get the cake pieces covered! I am sure there is a technique to do this, i saw some clips on you tube and it looked simple, maybe my icing was too thick…Obviously, after the lamingtons has set, i tasted one to see what it was like as i have never had one before so i wasn’t sure how they should taste as i have got no comparisons!! I must say, there were very delicious and quite moorish!! They reminded me of the snowball tea cakes but without the marshmellow inside or like bounty! Took them to work and they were an instant hit! Everybody was commenting on how yummy it was so i must have done something right! April made some lovely lemon slices and rocky roads which i had 2 pieces of each!!!
