Vegetarian Dishes 2020 – April

This is my go to easy vegetarian meal when i am being lazy which is a seafood linguine as i can make this for the whole family. My husband and I would have the seafood and then i will toss some of the linguine in butter for the kids.

I normally buy this mussels and garlic butter or white wine sauce in a box from the supermarket which cost £2-£3 and you only just need to heat it up in boiling water for 10 mins. 

When i cook the mussels in the pot, i will then add some prawns, crabsticks or crayfish to go with it or what ever i can find in my fridge/freezer to heat up and the linguine is coated in abit of the sauce. Sometimes, i would add mushrooms or courgettes to bulk it up. Very delicious! 

Vegetarian Dishes 2020 – March

In March, I made Halloumi burgers with sweet potatoes. I didn’t think it would be filling as normally my burger buns are filled with meat! I found such a simple recipe and you only need a few ingredients. 

I sliced up the halloumi cheese and grilled them and brushed them with a bit of olive oil of each side for a couple of minutes. Then I made up the buns with the halloumi, shop brought hummus, lettuce and a slice of tomato and put then in the brioche buns. You can add salsa with it but i just have the good old ketchup with the burger. 

To go with the burgers, I cut up some sweet potatoes into wedges, added some olive oil and herbs and put them in the oven for 30 – 40 mins.

Ingredients:

  • 250g block halloumi cheese, cut into 8 thick slices
  • 1 tbsp olive oil
  • 4 brioche buns
  • 4 tbsp hummus
  • 1 large ripe tomato thinly sliced
  • 4 Butterhead lettuce leaves
  • 4 tbsp fresh tomato salsa (most supermarkets stock a version)
