Pancake Day 2023

It’s pancake day today! I have a super easy recipe that you can make with your kids, the texture is like the American pancakes, soft and fluffy!

Ingredients:

1 egg, 1/3 cup of plain flour, 1/2 tsp baking powder, 1 tsp vanilla extract, a pinch of salt, 45ml milk, and 1 tsp butter & 1/2 tbsp oil for frying.

Suggestions for toppings – Maple Syrup with berry fruits, Nutella and banana, ice cream and sprinkles or the classic flavor – lemon, and sugar!

Method:

  1. Separate the egg, putting the white and yolk in separate bowls. Mix the egg yolk with the flour, baking powder, vanilla extract, and milk to make a smooth paste.
  2. Beat the egg white and a pinch of salt with an electric whisk or by hand until fluffy and holding its shape. Gently fold the egg white into the yolk mixture. Be careful not to knock out any of the air.
  3. Heat the butter and oil in a non-stick frying pan. Dollop a third of the mixture into the pan and cook on each for 1-2 mins or until golden brown. You can make about 3 pancakes or you can make 1 big one! Enjoy!

Feb 21 Veg Dish – Pancake Day – Korean Side Dishes

Happy Pancake Day! As it’s Pancake Day, I thought I would write up the recipe for the Kimchi Pancakes and Cucumber Salad for my vegetarian February dish! 🙂 Last year back in February, I went to a Korean Cooking course and loved it! I leant a couple of dishes and thought I would try making some of the side dishes by myself. I love attending live cooking lessons and meeting new people in the classes. Also, the teacher gives you great cooking/baking tips and you learn so much rather than through a virtual experience. Hopefully, when the COVID-19 situation calms down and we can be more social and events can take place, I would love to attend more lessons to gain more cooking/baking skills. At that moment, i have got so many gift experience vouchers that I am unable to use due to all the lockdown and restrictions we had last year so hopefully later on the year, we are able to use them!

I made two sides: Kimchi Pancake – Kimchi Jeon and Cucumber Salad – Oyee Muchim. Both of these are very simple to make and doesn’t take long to prepare! The recipes are using basic ingredients that you can find in your store cupboard, the only thing that you need to buy is the Kimchi which can be found easily in the World Food section in the grocery stores. I am pleased to say that both dishes were delicious and flavorsome and it turned out really well!

Kimchi Pancake ingredients – Half cup chopped kimchi, half cup chopped spring onions, half cup batter (made of 1/3 plain flour, 1/3 corn flour, 1/3 panko breadcrumbs), 1x tsp chilli powder, 1/4 tsp salt, 1/4 sugar, half cup of cold water and 1x tbsp vegetable oil. You might want to have a sprinkle of sesame seeds to finish on top.

Dipping Sauce – Mix 1x tsp of soy sauce, 1 x tsp vinegar, 1/2 tsp chilli flakes, 1x tsp spring onion and 1/4 tsp sugar.

Method: Put in and mix all the ingredients in a bowl except the oil. Heat the oil in pan, once well heated, pour and spread the mixture. Press thin and make a round shape and flip it over when the bottom is well cooked. Sprinkle some sesame seeds on top and serve with the dipping sauce.

Cucumber Salad ingredients – Half a cucumber, 1x tsp soya sauce, 1/2x tsp sesame seed oil, 1/4x tsp sesame seeds, 1/2xtsp chilli powder (you can add more chilli if you like it hot), 1/2x tsp minced garlic and 1/2x tsp chopped spring onions.

Method: Cut the cucumber into half moon shape, 5mm wide and put into a bowl. Mix everything together except for the sesame seeds as you want to add this at the end when you are serving your dish. It is best to make it in advance so that you can chill this in the fridge and for the cucumbers to marinade. You can always add more to the marinade so just taste it and see what you need to make it delicious! 🙂

It’s PANCAKE DAY / SHROVE TUESDAY Today!!! I do wish they would franchise IHOP (International House of Pancakes) Restaurants here in the UK but you can only find the branches in America! They make the best pancakes! If you ever visit America, make sure to find an IHOP branch to experience their pancakes, you get such a good value for your money and the serving is massive!!! 🙂

I love using Nigella’s instant pancake mixture. I saw her receipe on TV and thought what a great idea to have access to pancakes at anytime!!! I would mix all the dry ingredients and pour them into a big jar and keep it in my kitchen. 1 cup of pancake mixture would make about  12 – 15 mini pancakes and they are so delicious and yummy!! Very light and fluffy texture! 🙂

Here’s her receipe and just mix it altogether:

  • 600g plain flour
  • 50g baking powder
  • 2 x teaspoon of bicarbonate of soda
  • 1 x teaspoon salt
  • 50g caster sugar

When you do want to munch pancakes either for breakfast, dinner or as a dessert, use the following receipe to make 1 batch:

  • 1 cup of pancake mixture (150g)
  • 1 egg
  • 250 ml milk
  • 1 tablespoon of melted butter (or you can use Flora Cuisine) into the batter and whisk everything
  • Also, for you can add a 1 teaspoon of vanilla extract for extra flavouring!

Spoon the pancake mixture onto a flat pan, no need to add oil and cook for 2 – 5 minutes until nice and golden! As I can only fit 2 – 3 pancakes in my pan, I don’t want them to go cold so I would warm up the oven GM3 (160C) and once the pancakes are cooked, put them into a ovenproof dish and serve when I have used all the mixture!

For the topping, Nigella uses blueberry syrup which consists of 125ml maple syrup and 200g of blueberries. All you need to do is boil them a pot so that they merge together as a sauce.

If you don’t want to use maple syrup as this is quite sweet, you can just boil the blueberries with 2 x tablespoon of water and 2 teaspoon of sugar. If you squeeze some lemon juice, this enhances the blueberries. Also, I found that just using 1 packet of blueberries which normally measures 125g is sufficient to make the sauce for 2 – 3 people.

There are lots of ideas for pancake toppings, you can squeeze some lemon juice and sprinkle some sugar or you can spread jam or nutella, banana and cream, add golden syrup, the list is endless! 🙂
