Last night, I went to my in-laws for ‘Mother’s Day’ dinner and my mum joined us too so it was a big gathering of 12 of us!!! My mother in law cooked a lovely dinner with a lot of food, I think it is in true ‘Filipino style’ – best to have more than less!!! 🙂 We had roast pork, potatoes, fried chicken, yorkshire puds, onion rings, noodles and rice! And for desserts, we had the chocolate swirl cake and profiteroles that we brought along with us, cheesecake & strawberries and some fruits. My niece (9 years) and nephew (6 years) made some yummy cookies – chocolate chip and hazelnut & white chocolate for their grandma!!! 🙂 We were so stuffed by the end of the night! It was a really nice evening to have a good old catch up with everyone and having a few giggles & jokes around the table!! 🙂
Happy Mother’s Day to everyone who is a Mum! 🙂 I would normally bake something special for Mother’s Day but this year, I am pushed for time….
In my cupboards, I would always have a box of ‘Betty Crockers – Chocolate Swirl Cake’ as it so quick and easy to use with no measuring just mixing everything altogether! Also, you don’t to make a trip to the shops as all the other ingreditents, you should have at home already – water, vegetable oil and 3 eggs. In addition to this list, I would normally add half a teaspoon of vanilla extract for extra flavouring!
This is the only instant cake mixture that I buy, you can’t go wrong with this receipe! Once baked, the texture is light and soft, I think this is due to the oil making the mixture quite moist! 🙂 Also, we brought some profiteroles as well for a dessert! 🙂
